Palmense gastronomy

Here, we explain you which are the most typical dishes of the gastronomy of La Palma. Take a museum route in the morning and find a restaurant to try them!

Watercress stew

It is the Canarian dish par excellence, since it is the most popular and, likewise, it is the most popular dish in most of the islands. The main ingredient is watercress, a plant very similar to cabbage. However, it also contains corn cobs, pork ribs, potatoes, etc. The content makes it have a very strong and forceful flavor.

It is a hot dish, therefore, very ideal for the coldest days. The preparation usually varies according to the geographical area where it is served, but any watercress stew is characterized by its intense flavor.

Puchero

It is very similar to the cocido made in other parts of Spain, such as Alicante or Madrid, both in the way it is prepared and in its flavor.

It consists of a base of meat, vegetables and chickpeas. In some places potatoes or carrots are also added. It is a meal that is prepared for more than one day, therefore, it is normal that in most homes it is consumed more than once a week.

The puchero is not a typical winter dish, as it is usually prepared in late spring or early summer, unlike in other parts of Spain.

Meat party

The carne fiesta is another of the most famous dishes in Las Palmas and, in addition, it is not heavy to digest. It is usually accompanied with a soft drink or a beer as a tapa among several people.

It is composed of pork meat in small pieces, which makes it ideal as an appetizer. The meat is very spicy, since it contains pepper, oregano, parsley and paprika.

Although you can eat it in any bar or restaurant on the island, it is more typical in pilgrimages and religious festivities.

Sancocho

It is a meal that requires a more exhaustive preparation. It requires a salted fish such as, for example, corvina. For this, it must be prepared a week in advance in brine and salt. Once desalted and after 24 hours it can be cooked.

In most restaurants it is served with potatoes or sweet potatoes in small pieces, and even with canary plantain.

It is usually made during Easter, although due to the large influx of tourists throughout the year, it can be tasted in any month.

Viejas guisadas con papas arrugadas (stewed old women with wrinkled potatoes)

The secret of this meal is that it is made with a fish that is only typical of Canary Island waters; it is called vieja.

It is cooked fried or baked depending on the area where you are. It should be noted that it is a very tasty and rich dish because of its green ingredients: crushed tomato, olive oil or garlic. It is served with potatoes or salad and green sauce.

A dessert? Bienmesabe

Desserts cannot be missing in the gastronomy of Las Palmas. The origin is curious, since it is from Malaga, however, it is very popular in Las Palmas due to the expansion it had in its beginnings.

It is a cake very sweet and is made with almonds, eggs, sugar and ground cinnamon.

At LOCK & enjoy! we recommend that you ask in the capital’s bakeries and confectioneries.

Mojo

The mojo canario is the king par excellence of the gastronomic offer. It is a traditional sauce used to accompany wrinkled potatoes, and even any type of meat or fish, depending on the preferences of each person. It is one of the tourist and gastronomic emblems, since it is a very popular product in any store.

There are countless varieties: green, red, soft, picones, etc. The industry has also incorporated it into cheeses, fruits and almonds, among other elements.

Rabbit in salmorejo

It is important not to confuse it with the Andalusian salmorejo, as they are very different dishes. Its consumption is more widespread on the island of Tenerife, however, in LOCK & enjoy! we have also found that it is served in restaurants in Las Palmas.

In this case salmorejo is a sauce made of garlic, bell pepper, water, oil and salt and is used to marinate the rabbit.

Don’t leave without trying it!

Old clothes

This food is also typical in other areas of Spain, although in Las Palmas it has a greater importance due to its widespread consumption. It is a winter dish due to its strong flavor and the large amount of ingredients.

This is a leftovers dish in which the leftovers of a Canarian stew or puchero are used. It is composed of chickpeas, meat, chicken, potatoes, peppers, bacon, etc.

Another dessert? Sweet potato trout

The Canary Islanders are very creative in gastronomy. A good example of them are the sweet potato trout. They are made from trout puff pastry, also called empanadilla, and sweet potato. It is a surprising fusion of flavor that will not leave you indifferent.

They are prepared throughout the year, although they are more typical of Christmas.
