The gastronomy of Palma de Mallorca is a very important part of the Majorcan identity and culture, being one of the most relevant attractions of the city. Therefore, we have prepared a wide selection of local products and dishes that are a real delight.
Ensaimada
Although the ensaimada is sold in many places in Spain, it is very famous in Mallorca. It consists of a bun formed by a strip of puff pastry in the shape of a spiral. The main ingredients are flour, sugar, eggs and lard.
The first historical references to this product date back to the eighteenth century, since there are writings in which the elaboration of the Mallorcan ensaimada already appears on the occasion of the celebration of events and festivities. In 1996 it was recognized as a Specific Denomination and in 2003 as a Protected Geographical Indication, given its importance as a local and tourist attraction.
The traditional ensaimada is the one that does not have any filling inside, better known as “lisa”, it is also very popular the one filled with angel hair.
Over the years, other types of ensaimadas have become popular and also have a very loyal public, such as the cream, cream or chocolate ensaimada.

Sobrasada
Sobrasada has its origin in Mallorca, which is why it is another of the most important gastronomic products. Although the climatic conditions of the island are not the most favorable for the preservation of the meat by curing whole pieces, over the years it has been made with cured raw sausages.
During the 16th century, Mallorca began to develop an important charcuterie tradition with the typical products of the island. For this reason, sobrassada becomes one of the most common forms of preserves in the pantries of any Mallorcan home.
At present, it is a product with Protected Designation of Origin (PDO), a detail that makes the difference with other types of food. It is made with Mallorcan black pig meat, one of the island’s native breeds, and then mixed with paprika, salt and spices. Finally, it is stuffed into natural casings to be cured in the air.
This product is characterized by its versatility in the kitchen, since it is used in numerous dishes. It is usually spread on bread, but it is also used as a base for stews.
In most tourist areas of Palma de Mallorca you can find traditional charcuteries that sell sobrasada mallorquina, both in pieces and by weight.
Arrós brut
The “dirty rice” can be tasted in any of the restaurants of reference in the city. Its name is due to the cloudy and brownish broth that the spices give it, as well as the chopped liver that is added at the end.
It has a rural origin, since the farmers (known in Mallorca as payeses) threw into the fire everything that had been hunted during the day. This small detail makes the ingredients vary from one area to another and, likewise, it also takes into account that the vegetables also change according to the season.

Cokes
Cocas is a very common product in areas such as Catalonia and the Valencian Community, as well as in Palma de Mallorca. Although the way it is made varies according to the population, it is generally a mixture of water, flour, yeast and oil; there are sweet and savory ones.
The most famous in Mallorca is the coca de trempó. It is made with vegetables such as green peppers, onions, tomatoes and paprika. You can buy it in any of the bakeries in Palma, as well as with peppers, vegetables or meat.
It is usually eaten for lunch or as a small appetizer before a meal, or even as a snack.
Pa amb oli
Also called: bread with oil. It is another of the most typical appetizers or side dishes in Mediterranean cities and, in addition, it is served in most restaurants as an additional product.
The origin is very curious, since in other times bread and oil were a guarantee of being able to eat properly.
The traditional recipe is with brown bread, extra virgin olive oil, ramallet tomato, olives and sea fennel as dressing. On top of the bread you can add some fish, eggs, meat or cheese.

Pica-pica
It is a 100% Mallorcan cuttlefish dish, but with a very special mixture. It is elaborated by means of a stew with onion, garlic, tomato, pine nuts, raisins, chilli peppers and paprika; for this last ingredient it receives its name.
It can be served with white rice, french fries or a simple slice of bread.
